It looks like the real estate market is really coming back with a boom! Realtors have been having Mack's BBQ bring our Santa Maria barbeque to help sell ranch properties. It's really cool that while you go around looking at properties to buy you can also enjoy great cowboy-style barbecue catering in a fun, country setting. Whole Pig Porchetta! Crispy-skinned! Fabulous! BBQ catering at its best!

Porchetta!  Amazing, crackly-skinned sweet pork!  This Italian classic is usually served as street food, sliced and packed into a bun.  Pork belly and loin are the cuts of choice.  Herbs are rubbed all over the meat.  It's then rolled, tied and roasted slowly over low heat until the fat renders and the skin gets super crunchy, crispy.

My friends Harry and Suzanne asked me to join them in making a whole-pig porchetta.    Of course when it comes to barbeque catering we jumped right in!  So we thought instead of just slow-roasting it, we should add a little smoke and cook it on the barbeque spit.  This porchetta ended up being almost five-feet of crispy, juicy barbeque goodness. The guests went wild!

Country Western Dancing and BBQ Under the Stars!

Mack's BBQ catering rolled out the Big Grill to the enjoyment of 300 guests in Palmdale last Saturday night. Lots of juicy Santa Maria barbeque tri tip and perfectly cooked chicken was served up while folks were line dancing under the stars. What a beautiful night!

The kids learned calf roping from a pro roper. Great fun!

Some light showers started up just north of the party, with the scent of High Desert rain filling the air. But the rain stayed away from the dance floor...and the party, and just helped to cool the Antelope Valley enough to make for a wonderful, comfortable night... a refreshing change from the hot weather which had been keeping us indoors. After hiding out in air-conditioning for days, as the sun was setting everyone was ready kick it outdoors into the night!
